Canadian & Vegan – the dessert

Shame on me! I promised you the recipe of our delicious canadian dessert much earlier I know. But I have kind of a dramatic cat situation here, including terrible diseases. But we´re working on it so let´s switch back to our fire fighting canadian evening.

I think I should summarize the evening for those who didn´t read part one (or you could just read it right now 😉 or I have a even better idea – my canadian guest Justin can summarize the things that happened this evening much better than I can.

Let´s listen to him:

Before that hot situation we prepared our delicious s´mores cake:

Ingredients:

  • 1/3 cup flour
  • 1 cup soy milk
  • 1/2 cup dairy free margarine (Alsan-S)
  • ½ cup dairy free (real dark) chocolate
  • 2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup dairy free chocolate chips
  • 2 cups vegan marshmallows (we used dandies)
  • 2 cubs crumbled  graham cracker or digestives (we used Glutano Landtaler)

Preheat the oven to 190 degrees °C.

Combine the 1/3 cup flour and non-dairy milk in a medium saucepan and cook over medium heat, stirring constantly, until thick and gummy. Set aside to cool slightly.

In a medium saucepan in a double boiler, melt the dairy free margarine and chocolate. Set aside to cool slightly.

Grease a pan with non dairy margarine and dust lightly with flour. Set aside.

In a separate medium bowl, combine the flour, baking powder and salt. Set aside.

Add the sugars and vanilla to the chocolate mixture. Stir in the cooked flour mixture. Mix thoroughly.

Fold in the dry ingredients. Spread into prepared pan.

Place in oven. Bake about 8 minutes. Sprinkle the marshmallows over the cake and place back into the oven.

Bake another 8 minutes. Spread the crumbled cracker over and sprinkle the chocolate chips on top. Place back in oven for another 8 minutes.
