Turkish & Vegan: Sebzeli Bulgur Pilavı

Another awesome international vegan cooking fest took place in my cute small kitchen. And I´m so sad that all the food is gone now. But the good thing is – I have the recipes! 🙂

This time a very nice man from turkey honored me with his presence and his fantastic cooking skills. Yucel is one of the very few vegans in Istanbul. So I´m very proud that he was able to visit and cook with me.

Yucel showed my friends and me how to make a huge amount of Sebzeli Mercimek Çorbası which we ate with another huge amount of Sebzeli Bulgur Pilavı. It was soooo delicious. My favorite is the last one so I´m going to tell you how to make it! 🙂

Sebzeli Bulgur Pilavı

  • 2 onions, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1 eggplant, chopped
  • 2-3 tomatoes, chopped
  • 1 table spoon tomato puree
  • 1 bunch of parsley, chopped
  • 2 cups bulgur
  • 2 1/2 cups hot water
  • 3 tablespoons vegan butter
  • olive oil
  • salt & pepper

Heat oil in a frying pan. Add the chopped onions and the tomato puree. Let fry for 2 minutes. Add the bell peppers and eggplant. Let fry for another 5 minutes.

Add the bulgur and the hot water. Cook until the water is gone. Then add the tomatoes and season with salt & pepper.

Add the parsley and the vegan butter.

The Sebzeli Bulgur Pilavı is ready to serve now (together with Sebzeli Mercimek Çorbası for example but it also is a delicious dish on its own 🙂 )!!
