The cooking with Penny from Cahuita, Costa Rica was pretty inspiring. She and her husband decided to quit eating meat around 45 years ago for ethical reasons! WOW! It´s pretty hard to find someone in Europe who is veggie for so long. You can imagine how impressed I was – I still am!
In my last blog I told you how I met Penny and that we made Gallo Pinto together. But she also teached me how to make a Costa Rican sweet dish which I really enjoyed. It is so easy to make and so delicious – Platanos maduros.
You can buy those delicious plantains everywhere in Costa Rica. And I even made Platanos maduros back in Germany allready. I found the right bananas in an asian shop.
They look like those you can see in the picture above, very long, big bananas but they should be more ripe/yellow like in the next picture if you want to use them for Platanos maduros.
Let´s go then!
Platanos maduros (fritos)
- plantains
- oil (sunflower or soy)
- optional: cinnamon
Cut the plantains in pieces and peel them. Slice the plantains and heat the oil in a large frying pan.
Add the plantains to the pan. Cook until golden on each side. Make sure to turn them before they burn. Sprinkle the slices with cinnamon. There is no need to add sugar or sweetener because those ripe plantains are so sweet and yummy! You´ll see when you try them.
Place the cooked plantains on a paper towel to drain any excess oil.
Serve warm and enjoy!
