Costa Rican & Vegan: Crema de Pejibaye (vegan)

A German friend who is living in Costa Rica introduced me to the delicious little green/orange Palm Fruits called Pejibayes which you can buy almost everywhere in Costa Rica.

The ticos eat them cooked and peeled or as Palm Fruit Soup – Crema de Pejibaye. As I was faszinated by the taste of that gorgeous little fruits I asked around for the recipe, thought of a vegan version and gave it a try! The vegan Crema de Pejibaye turned out really, really good so I’m going to share that delicious recipe with you!

The taste of the Pejibayes is a mixture of potatoes, sweet potatoes, pumpkin and chestnut. Sounds good, hm? It is awesome and perfect for a little, creamy soup!

Vegan/Vegetariano Crema de Pejibaye

 

Quite easy list of ingredients if you get your hands on the Pejibayes though. But I was told that you can buy them canned too. So give it a try!

If you take fresh palm fruits – you have to boil them around 45 minutes. Peel and core them. Mix them together with three cups of water.

Chop the onions and the garlic. Put the oil in a big frying pan. Add the onions and garlic. Sauté until onions are clear. Add the palm fruit puree.

Add the vegan milk and season with salt & pepper.

Chop the parsley. Add to the soup.

Add some water if the soup is too thick. Enjoy! 🙂
