Russian & Vegan – Cabbage indeed can be delicious

Another Natalie came into my kitchen and that´s not the only common ground she shared with my belgian Nathalie. She´s another mutual friend of my first cooking guest Justin.

As my dear friend Justin is travelling through Russia at the moment he was hosted by Natalie and her sister in St. Petersburg. Natalie was planning to go to Berlin for a few days and Justin told her about my project. So Natalie and I ended up cooking together delicious russian vegan dishes supported by my dear friend Nina.

Our main dish was Schtschi, which is a soup with cabbage. I have to say I was pretty skeptical if it would taste good but indeed it was surprisingly good!

Schtschi

  • 4-5 potatoes
  • 1/2 cabbage
  • 1  carrot
  • 1-2 onion(s)
  • 100 gramm tomato purée
  • 1-2  tomato(s)
  • salt & pepper
  • vegetable stock
  • spices like basil, parsley etc.

Chop cabbage and potatoes into small pieces – Natalie likes them very small. 😉

Put the cabbage into a pot together with cold water (about one liter) and bring to a boil. Put the potatoes in as well and some salt.

Chop onions, tomatoes and the carrot into small pieces. Stir some oil into a frying pan and put the vegetables in together with the tomato purée. Let fry for about 5 minutes.

After that put the fried vegetables into the soup. Season with salt & pepper, vegetable stock and spices to taste.


Boil until potatoes are ready. Serve hot with vegan cream and bread.

And as we had time until the soup was ready Natalie showed us another cabbage dish which we ate as second course.

Fried Cabbage

  • half a cabbage
  • 1 onion
  • 1 carraot (or any vegetable you have in your fridge)
  • oil
  • salt & pepper

All you have to do is to cut everything in pieces and fry it with some oil in a frying pan. Put a cover onto the frying pan and let it sit at medium heat about 20 minutes. Season with salt & pepper.

I really fell in love with that dish as it is so easy and delicious. Nat told me you can use any vegetable you like and of course you can season with spices or tomato purée as well. Have fun trying out what you like with your fried cabbage! It´s pretty good!
