Pakistani & Vegan & Raw (in Costa Rica) Raw Mango Coconut Curry

The main reason why I went to Costa Rica was to visit my dear friend Laila who recently moved there with her husband. And luckily for my challenge Lailas father is from Pakistan which means that she´s half-Pakistani. So we decided to make a delicious Pakistani meal together. Because Laila is a big raw food fan we even made the whole thing raw!

What we did was a raw food version of a delicious Mango-Coconut-Curry with an awesome Cauliflower rice and for dessert we had raw Burfis.

Raw Mango-Coconut-Curry with Raw Cauliflower-Cilantro-Rice

for the rice:

  • one cauliflower
  • Cilantro (to taste – it really depends on your taste)
  • half a lime
  • turmeric to taste
  • sea salt to taste
  • raisins

Put everything except the raising in a food processor or your blender and pulse until you have a rice-like consistency. Put in a bowl and add some raisins.

for the curry:

  • one coconut
  • one or two ripe mango(s)
  • one tomato
  • half a onion
  • turmeric to taste
  • some cilantro to taste
  • sea salt to taste

Blend the coconut water together with the flesh until you have a creamy coconut milk.

Peel and cut onion, tomato and mango.

Safe 1/4 of the mango pieces for later. Put the rest together with all the other ingredients to the coconut milk and blend until smooth and creamy. Add some water if needed.

Put everything in a bowl and add the safed mango pieces. Put rice and sauce together on a plate. Add some raisins and enjoy!
